Their appearance is brief, unpredictable, and dependent entirely on nature’s timing. Miss the moment, and it’s gone.
Chef Juan Pajarito is currently designing a five-course tasting menu built around wild black trumpets, thoughtfully developing each dish to highlight their deep aroma, dark elegance, and natural umami.
